Skipping 11th grade consequences?

My school counselor told me that I have the option to totally skip eleventh grade and become a Senior next year. Today she said that some colleges want seven transcripts and although they'll attach a note explaining the missing one, that it could hurt my opportunities to get into some colleges. The main universities I'm looking at are UC-Berkeley (unlikely), Stanford (unlikely), University of Washington, and NYU. Does anybody know about these schools in particular or just about schools in general?
